100% Unpeated Barley Malt

1000 KG Barley Malt freshly milled and mashed, baker & brewer yeast, fermentation time 72 - 96 hours, first distillation with all the grist (no "laeutering" aka filtering of the mash) in a traditional German grain column still, 2nd distillation in a small copper pot still, new make is reduced to 60%vol Alc. and then shipped from the distillery to the ageing warehouse.

Ageing: 10 years old: Principal ageing of 5 years in refill Bordeaux red wine casks made of American oak, further 5 years of ageing in 1st and 2nd fill Oloroso Sherry casks.

100% peated Barley Malt (35ppm in the malt)

Ageing: All three malt types are aged separately in the same types of barrels for the first 5 years. After a quality control they are then blended to a "Triple Malt" and aged for a further 5 years together in the same barrel type
